Chewy Apple and Oatmeal Cookies

These Chewy Apple and Oatmeal Cookies are so light and healthy that you can eat them for breakfast. Crumble them in your yogurt or heat them as an ice cream topping for dessert.

Serves: 12

Preparation Time: 15 min

Cooking Time: 30 min

Ingredients
  • 5 ounces wholemeal (wholewheat) flour
  • 5 ounces porridge oats
  • 3 ounces sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 5 ounces applesauce
  • water to mix
  • 5oz flour = 1 cup
  • 5oz oats = 1 1/2 cup
  • 3oz sugar = 1/2 cup
  • 5oz applesauce = 1/2 cup
Instructions

1. Mix the dry ingredients together.

2. Mix in the applesauce, then add enough water to make a sticky but not too runny batter. Do this as quickly as possible, then place spoonfuls of the mixture on a lightly-greased baking tray, flattening into cookie shapes - they will rise and expand sideways slightly.

Bake at 325 F (Gas 3, 160 C) for about 30 minutes until cooked but not crisp.
