Butter Cookies

Ingredients
  • 1/2 cup butter
  • 4 tablespoons shortening
  • 1/2 cup confectioner's sugar
  • 1 tablespoon vanilla
  • 1 tablespoon lemon juice
  • 1 egg yolk
  • 2 cups flour
  • 1/2 teaspoon salt
  • jam
Instructions

Cream butter with shortening and sugar beat until fluffy. Add vanilla, lemon juice and egg yolk beating until well blended. Sift flour and salt adding gradually to the creamed mixture. Beat until smooth. With hand shape into small balls (3/4") flatten slightly and make indentation in center and place 1/2 teaspoon of jam in indentation. Bake at 325F for 25 minutes or until slightly brown.
