Soft Christmas Cookie

Making Christmas cookie recipes is one of my favorite parts of the holidays. For a delicious but simple cookie try making the Soft Christmas Cookie recipe into a batch, they're so good.

Notes

A stand mixer works best. Most hand mixers don't have the power to work with this much cookie dough. If using a hand mixer, add the last bit of flour by hand.



If you use jumbo eggs or are baking in a hot, humid kitchen, reduce yolks to 6.

Cooking Time15 min

Ingredients

  • 2 eachs butter (about 4 sticks)
  • 2 cups sugar (about 1 pound)
  • 7 large egg yolks
  • 1 egg white
  • 1/2 cup sour cream
  • 8 cups cake flour
  • 1/2 teaspoon baking powder

Instructions

  1. Cream the butter until very light.
     
  2. Add sugar; cream butter and sugar until combined.
     
  3. Add egg yolks and sour cream and beat until combined. Slowly add flour and baking powder .
     
  4. Mix on low speed until dough is uniform. Refrigerate until cold (about one or two hours).
     
  5. Preheat oven to 325 degrees F.
     
  6. Roll out some dough to about 3/8 of an inch thick. Refrigerate remaining dough.
     
  7. Cut cookies and place on ungreased cookie sheet. Brush with egg white or beaten whole egg.
     
  8. Bake at 325 degrees F for 15 minutes until golden; watch carefully.
