Devil's Food Cake

If you're looking for simple chocolate cake recipes that don't come out of a box, then you must try this Devil's Food Cake. It's easy and definitely not boring, you'll love it.

Notes

Sour milk is commonly used baking, here's how to make it: Measure out 1 cup milk (whole or 2 percent works best in baking). Add 1 teaspoon of plain vinegar or lemon juice. Stir the ingredients.



Let the mixture sit for about 10 to 15 minutes. Once you see it began to curdle slightly it's ready for use.

Ingredients

  • 1 cup butter (about 1/2 pound)
  • 2 cups sugar
  • 5 eggs, separated
  • 4 squares of dark chocolate, melted
  • 2 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon vanilla
  • 1 cup sour milk (see notes section)

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Cream butter, add sugar gradually & mix well.
     
  3. Add chocolate melted over hot water and and mix in well.
     
  4. Add beaten yolks. Beat mixture thoroughly.
     
  5. Sift flour, measure and sift several times with salt & soda.
     
  6. Add to the first mixture alternately with sour milk beating well after each addition.
     
  7. Add vanilla, fold in beaten whites.
     
  8. Bake in 3 greased 9 inch pans at 375 degrees F for about 25 minutes.

Please list ingredients a lot better than this! I won't waste 2 sticks of butter making this recipe when I don't have a clue what weight chocolate square you're talking about! I use very expensive chocolate, not available in grocery stores, and they do not come in 1 oz. squares. What is the weight of the squares you require here? Also, large eggs and small eggs can drastically alter a recipe! What size eggs? What type of flour? All-purpose? Geez! This site is abysmal for this sort of thing & I rarely find a recipe I can make! It shouldn't be guesswork and it definitely shouldn't be this vague!
