Ultimate Firefighters Chili

Chili recipes are a staple in any firehouse, they're easy to make and perfect for feeding a crowd. This Ultimate Firefighters Chili has been rated as top notch by many a fireman we know.

Ingredients
  • 2 cans (16-ounce) red kidney beans
  • 1 can (16-ounce) baked beans
  • 1 can (10-ounce) tomato paste
  • 1 1/2 pounds ground beef chuck
  • 1 pound bulk pork sausage
  • 1 can (16-ounce) Mexican tomatoes
  • 1 medium onion, chopped
  • 3 to 4 jalapeno peppers, seeded, deveined and chopped (optional)
  • 1 small can mushrooms, drained
  • 1 quart bottle of beer
  • 1 green pepper, chopped
  • 1 small can black olives, drained, sliced
  • 1/2 bottle of (12-ounce) chili sauce
  • 1 tablespoon hot pepper sauce (or to taste)
  • salt to taste
  • pepper to taste
  • 1 to 2 garlic cloves, minced
  • 1 1/2 tablespoons cooking oil
  • 3 teaspoons chile seasoning
Instructions
  1. Open the bottle of beer and taste for freshness. Saute the onions, garlic and Jalapeno's in oil till onion is translucent.
     
  2. Brown the ground chuck in a separate frying pan, drain and add to onion mixture.
     
  3. Repeat with the pork sausage. Meanwhile, taste beer again.
     
  4. Transfer sausage, ground beef and onion mixture to a medium sized kettle. Add remaining ingredients, except for beer.
     
  5. Mix together well and add some beer and stir until desired consistency is reached.
     
  6. Bring to a slow boil and reduce heat. Simmer, stirring occasionally, for 2 to 3 hours. Add more beer to chili as needed.
     
  7. Serve piping hot with cheese, corn chips or corn bread.
