Ingredients

  • 1 tablespoon olive oil
  • 1 large red onion, chopped
  • 1 clove of garlie, chopped
  • 1 tablespoon chili powder
  • salt, to taste
  • pepper, to taste
  • 1 can (24-ounces) tomato sauce
  • 1/2 cup water
  • 1 can (14-ounces) pinto beans
  • 1 medium butternut squash, skinned and chopped into 1/2 inch cubes
  • 4 chilic in adobo sauce, chopped
  • 3/4 cup quinoa cooked according to directions
  • Cheddar cheese, sour cream, and jalapenos to top as desired

Instructions

  1. Heat the oil in a large pot over medium and add the onion and garlic. Cook until the onion softens.
     
  2. Add the chili powder, salt, and pepper and mix to combine, cooking for approx 1 more minute.
     
  3. Add in the tomato sauce, water, pinto beans, squash, and chilis, bringing to a simmer.  Cook for approx 10 minutes.
     
  4. Add in the quinoa and stir in completely. Cook for another 10-20 minutes until the squash has softened.
     
  5. Top with sour cream, Cheddar cheese and jalapenos.
