Sangria Chicken

Sangria Chicken is the most tropical, flavorful of mexican chicken recipes! With fruity sangria and luscious bites of papaya, this chicken bakes to mouthwatering perfection in no time. And of course, colby cheese and green chilies give it classic Mexican flavor!

Cooking Time: 20 min

Ingredients
  • 4 chicken breasts
  • 1/2 small onion, diced
  • 2 tablespoons green chilies, diced
  • 1/2 teaspoon ground red pepper
  • 1 medium to large papaya, diced
  • 1/4 cup Sangria (sweet Mexican red wine)
  • 3 tablespoons cooking oil
  • salt, if desired
  • fresh ground pepper, if desired
  • 1 cup Colby or cheddar cheese, shredded
Instructions
  1. Preheat oven to 375 degrees F.
     
  2. Saute onion in oil in a large skillet until soft.
     
  3. Remove onion from pan and place in medium bowl. Brown chicken in same pan. Sprinkle with ground red pepper while browning (be sure to sprinkle both sides). Add salt and pepper if desired.
     
  4. In onion bowl, add green chilies, Sangria, and papaya. Toss to mix.
     
  5. Place chicken in ovenproof baking dish. Pour onion mixture on top. Bake for 10 minutes at 375 degrees F.
     
  6. Top with shredded cheese and bake approx 5-10 minutes longer, or until cheese is melted. Great when served with guacamole and queso dip.
