Quick Chicken Parmigiano

Chicken Parmigiano is a classic Italian dish. You can make a quick shortcut version at home with this easy recipe.

  • 4 boneless chicken breast halves
  • 1 egg
  • 1/4 cup water
  • 2 tablespoons olive oil
  • Bread crumbs
  • 1/2 pound mushrooms
  • 1/2 cup chopped onion
  • 1 green bell pepper, chopped
  • 1 1/2 teaspoon crushed garlic
  • 1 1/2 cup jarred spaghetti sauce
  • 1 cup shredded mozzarella cheese
  1. Preheat oven to 350 degrees F. Wash chicken breasts. Beat egg and add water. Heat olive oil on low flame in frying pan.
  2. Dip breasts in egg/water and then coat with bread crumbs. Lightly saute coated breasts in olive oil, about three minutes on each side. Remove from pan.
  3. Using same pan, saute the mushrooms, onions and green pepper. Add crushed garlic. (You might need to add a little more olive oil to pan.) Saute all for about 15 minutes, then add spaghetti sauce.)
  4. Place chicken breasts in a medium-deep baking dish. Cover with sauce. Then cover with mozzarella cheese and bake for 35 minutes. Serve with pasta and Italian bread.

This is my go-to chicken parm receipe. But irst I pound the cutlets so they are uniformly medium-thicknes. I use my own pasta sauce (or any jarred one) without the vegetables, and I completely cook the chicken in the skillet. Then I oven bake it just until the cheese is melted. Then
