Oven Baked Herb Chicken

Ingredients

  • 3 pounds fresh whole chicken, cut up
  • 1/4 cup chicken broth
  • 1/4 cup white wine vinegar
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons corn oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh thyme, chopped
  • 1/2 teaspoon fresh marjoram, chopped
  • 1/4 teaspoon coarsely ground black pepper
  • 1/4 teaspoon ground cumin

Instructions

  1. Preheat oven to 475 degrees F.
     
  2. Rinse chicken with cold water and pat dry with paper towels.
     
  3. In blender, place broth, vinegar, parsley, chives, oil, salt, thyme, marjoram, pepper and cumin. Blend for about 30 seconds on HIGH.
     
  4. Place chicken in single layer in 1 1/2-quart baking pan. Pour seasoning over chicken. Place in 475 degrees F oven. Immediately reduce oven temperature to 350 degrees F and cook about 1 hour, turning and basting often, until done.
     
  5. Insert an instant-read thermometer into the thickest part of the chicken. Internal temperature should read 180 degrees F. Refrigerate leftovers.

I love how you start the recipe out cooking at high heat and turning it down to sear the skin without burning it and drying it out over the cooking time. It locks the spices into the skin and makes the chicken taste so much better in the end.
