Oven Baked Country Chicken

Enjoy the classic cooking of home with Oven Baked Country Chicken. Cooked with garlic, onions, potatoes, and bacon this makes for a heavenly meal that will satisfy your taste buds. Chicken baked recipes have never been this good!

Serves: 4

Ingredients
  • 1 medium chicken fryer
  • 1/2 pound potatoes, quartered
  • 1/2 pound carrots, thickly sliced
  • 8 small white onions
  • 1 cup dry white wine
  • 1 cup chicken stock
  • 2 slices bacon, diced
  • 2 cloves garlic, pressed
  • 1/2 pound mushrooms, sliced
  • 1 tablespoon flour
  • 2 tablespoons water
Instructions
  1. Preheat oven to 400 degrees F.
     
  2. Place chicken, potatoes, carrots, onion, wine, and broth in small roasting pan. Season with salt and pepper.
     
  3. Roast uncovered at 400 degrees F basting chicken and vegetables occasionally.
     
  4. Cook bacon until brown but not crispy. Add garlic and mushrooms, saute until mushrooms are slightly browned. Add to roasting pan after chicken has roasted for 30 minutes.
     
  5. Roast for an additional 15 to 20 minutes. Remove chicken and vegetables to platter and keep warm.
     
  6. Blend flour and water, stir into pan liquid. Cook, stirring constantly, until gravy is thicken. Serve with chicken.
