No Fat Fried Chicken

Try this healthy version of a fried chicken recipe. This chicken is baked instead of fried, but the seasonings are so good you won't miss the excess fat.

Serves: 4

Cooking Time: 40 min

Ingredients
  • 4 chicken breast halves, skinned, boned and patted dry
  • 3/4 cup buttermilk
  • 3 tablespoons Parmesan cheese
  • 1/2 cup dry bread crumbs
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 black pepper
Instructions
  1. Heat oven to 400 degrees F.
     
  2. Cover a baking sheet with foil and lightly coat with non-stick cooking spray.
     
  3. In a shallow dish combine all ingredients except chicken and buttermilk.
     
  4. In a separate dish, dip chicken in buttermilk then roll in dry mixture and place on baking sheet.
     
  5. Bake at 400 degrees F for 35 to 40 minutes until golden.
