Ingredients

  • 1/2 cup diced onions
  • 8 ounces bulk pork sausage
  • 2 cups cubed cooked chicken
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup long-grain rice, uncooked
  • 1 cup chicken broth
  • 1 teaspoon thyme leaves
  • 1/4 teaspoon red chili flakes

Instructions

  1. In a large skillet, saute onion and sausage over medium heat until onion is soft and sausage is no longer pink, for 3 to 4 minutes. Drain.

  2. Add remaining ingredients and stir to combine. Bring to a boil.

  3. Cover and reduce heat. Simmer until liquid is absorbed and rice is tender, about 25 minutes, stirring once during cooking time.
