Loaded Chicken Spaghetti Casserole

If you are looking for easy casserole recipes for dinner that your family will love, than a good spaghetti casserole is the trick. This recipe for Loaded Chicken Spaghetti Casserole is a very hearty, irresistible casserole that will have everyone coming back for seconds.

Ingredients

  • 8 ounces spaghetti
  • 1 tablespoon butter
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 1/2 cup tomato, chopped
  • 1/2 cup zucchini, chopped
  • 1/2 cup red bell pepper, chopped
  • 2 cans (10.75-ounce) 98% fat-free cream of mushroom soup
  • 1 cup low-fat milk
  • 8 ounces shredded cheddar cheese (reduced-fat)
  • 2 cups cooked, chopped chicken
  • salt and pepper to taste
  • 1/2 teaspoon oregano

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Spray a large casserole dish with nonstick spray.
     
  3. Cook the pasta according to package directions, but only cook it until it's al dente (not fully cooked). Drain the pasta and set it aside.
     
  4. Melt butter in a large skillet over medium heat. Add mushrooms, onion, zucchini, tomato and bell peppers.
     
  5. Cook until the vegetables have softened, about 5 minutes. In a medium bowl, mix milk and soup until combined.
     
  6. Add this mixture to the vegetables in the pan. Stir in cheddar cheese and continue to heat the mixture until the cheese has melted and the sauce is smooth.
     
  7. Add in chicken, pasta and seasonings. Pour the mixture into the prepared casserole dish. Sprinkle more cheddar cheese on top (as desired).
     
  8. Bake for 35  to 40 minutes, or until the casserole is bubbly and golden brown.

I will make this but make some adjustments. I will not use has much ingredients as suggested. Use No Salt Can Mushrooms, 1 can of Diced Tomatoes with Green Chilies because I have no Green Pepper & cannot have cheese. I will use no salt & Zucckini & no milk as well, cannot have any dairy with the exception of very little but wish not to, due to some issues I have w/something else. I think it needs something, I will write back after I have made it to let you all know how it turned out. Plus, I will cook my Chicken before had & will bake it with Canola Oil brushed lightly on top at 350 for 25 minutes or less, will check it periodically.

Had this for supper,it was easy to prepare and very tasty.I omitted the Zucchini ,didn't have any on hand.I used leftover fried chicken.

How did you cook the chicken??? sautee in pan or boil in water??

If this does not work, we suggest that you highlight the text, then right-click on it. You'll get a window that gives you the option to "copy." Do that, and then paste the text into a word document. It took 3 pages for me as well and I do not appreciate having to print the add for "Recipe Gift Package" that shows at the bottom of this page, below this comment box! SHAME ON YOU for setting up the print function to include that crap. Any more recipes that I feel I want to print will be copied and pasted to notepad from now on and saved that way as well.

Hi, I highlight what I want and then copy and paste onto my word document and print from there. To copy the image of the recipe, I right click then copy and paste it under the recipe in my word document. Hope this helps.

How many does this dish served, made as is?

What is going on with the printing of recipes. It now takes 3 pages to print the recipe where it used to take one. I can't afford to keep this up. Do you have a quick fix? I'd hate to miss all these recipes but I can't run to the PC from the kitchen to read then cook it. Thanks so much Peggy12

Love your recipes but the printing out is really frustrating!! The 1st page ALWAYS omits some of the lines on the page. When printing this one it eliminated lines 3 & 4 of the instructions and the second page was fine picking up with lines 5-8. I don't get it!! The print preview through Google Chrome preview shows it all there on the page but it does NOT print no matter what!! Grrrrrrr. It will print out correctly using Microsoft Word but that is a hassle. Please check this on your end.... Thanks!!
