Hot Chicken Salad

If you love cold chicken salad, try this hot version! It's baked like a casserole so it's a great way to get a hot meal on the table for your family in no time.

Serves: 6

Cooking Time: 25 min

Ingredients
  • 2 cups cooked chicken, diced
  • 1/2 cup slivered almonds, toasted
  • 2 hard cooked eggs, chopped
  • 1 tablespoon onion, chopped
  • 1 cup mayonnaise
  • 1 1/2 tablespoons lemon zest
  • 2 teaspoons lemon juice
  • 1/2 teaspoon pepper
  • 1 1/2 cups (6 oz) Cheddar cheese, grated
  • 1 1/2 cups potato chips, crushed
Instructions
  1. Preheat oven to 375 degrees F.
     
  2. In mixing bowl, combine the chicken, almonds, eggs, onion, mayonnaise, lemon zest, lemon juice, and pepper. Mix well.
     
  3. Spoon the mixture into a lightly greased 2-quart casserole.
     
  4. Sprinkle with cheese and top with the potato chips. Bake for 25 minutes.
