Ingredients

  • 4 large boneless, skinless chicken breasts
  • 1 can light cream of chicken soup
  • 1 can light cream of mushroom soup
  • 1 can light cream of celery soup
  • 1 cup celery, diced
  • 1 cup instant brown rice

Instructions

  1. Mix the 3 cans of soup and rice together in the slow cooker.

  2. Place the chicken breasts on top of the mixture, and add diced celery.

  3. Cook for 3 hours on HIGH or 4 hours on LOW.

No one in our home is crazy about celery so we left out the celery and the celery soup and used snow peas and some white wine instead. Other than that we followed the recipe as written. Well it was excellent! The chicken was lovely and succulent and the rice had soaked up all the delicious flavors. It is budget friendly too which, for a family of 6, is always really good news!

This is such an easy recipe, and it sounds delicious! I won't use instant rice, either, because I think it would be cooking too long. I don't know why I never think to make chicken and rice recipes, unless it's rice as a side dish.

I made creamy homestyle chicken and rice casserole and it was tasty but the rice was like mush. I cooked it for 4 hr on low and I also thought it was a little thick. Any suggestions

I would use wild rice instead or regular brown rice. Instant rice doesn't hold up well for long cooking times.
