Double Chocolate Whiskey Cheesecake

Cheesecake is a pretty excellent dessert on its own. However, there are a few ways to make a cheesecake even more decadent than it already is. We have found those ways. First, you add chocolate to the cheesecake. However, we didn't just add chocolate, we added double the chocolate. Secondly, we added Jack Daniel's Whiskey. There is nothing Jack Daniel's cannot solve!

Ingredients

  • 1 cup semisweet chocolate chips
  • 1/3 cup milk
  • 24 ounces cream cheese, room temperature
  • 3 cups sugar
  • 6 large eggs
  • 4 tablespoons Jack Daniel's whiskey
  • 1 1/2 cup chocolate chips
  • 1/3 cup whipping cream
  • 2 tablespoons corn syrup
  • 2 ounces plain chocolate
  • 4 ounces butter
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 cup walnuts; optional

Instructions

10 to 12 servings.

  1. In microwave-safe glass bowl, melt chocolate chips with milk in microwave oven on high (100%) power 1 to 1 1/2 minutes or until smooth when stirred. Set aside.
     
  2. Meanwhile, in large bowl of electric mixer, beat cream cheese and 2 cups of sugar until smooth. Beat in 4 eggs until well blended.
     
  3. Beat in melted chocolate mixture and 2 tablespoons of Jack Daniel's whiskey until thoroughly blended.
     
  4. Spoon into buttered 9-inch springform pan.
     
  5. Bake in preheated 400-degree oven 15 minutes; reduce oven temperature to 350 degrees and continue baking 15 minutes.
     
  6. Remove from oven and carefully spoon on Fudge Brownie Batter evenly, starting at edges and working toward center.
     
  7. Return to 350- degree oven and bake another 35 to 40 minutes or until toothpick inserted in center comes out almost clean.
     
  8. Cool completely; refrigerate until thoroughly chilled.
     
  9. Remove sides of pan from cake. Spread Chocolate Ganache evenly over top of cake.
     
  10. Return to refrigerator and chill until ganache is set. Makes 1 cheesecake, 10 to 12 servings.
     
  11. In large microwave-safe glass bowl, combine chocolate with butter.
     
  12. Microwave on high (100%) power 1 to 1 1/2 minutes or until smooth when stirred.
     
  13. Beat in 2 eggs, the other cup of sugar, and vanilla until thoroughly blended. Stir in flour, blending well. Stir in chopped walnuts, if desired.
     
  14. Spread evenly over partially baked cheesecake.
     
  15. In large microwave-safe glass bowl, combine chocolate chips and whipping cream.
     
  16. Microwave on high (100%) power 1 to 1 1/2 minutes or until smooth when stirred.
     
  17. Stir in the other 2 tablespoons of Jack Daniel's whiskey and corn syrup.
     
  18. Refrigerate until mixture thickens to spreading consistency.
     
  19. Spread evenly over top of brownie topped cheesecake.

I didn't have any Jack Daniels on hand, but I had part of a bottle of some stuff called Maker's Mark, which I think is bourbon, and this stuff was amazing! This would be awesome for a night with the girls, and I might just serve it with a shot of whatever you add to it on the side!

Wow what a decadent dessert. I definitely want to try this one. Well worth the effort I would say. 4 tablespoons of whiskey is quite a lot and so I am expecting to taste it nicely. I like that. What is the point of making a liquor flavored cake if you can't taste the liquor. I find that happens often and is always disappointing. I don't think I will be disappointed with this cheesecake recipe.
