White Hominy and Corn Casserole

Ingredients

  • 3 cans (15.5-ounce) white hominy
  • 2 cans (11-ounce) white corn
  • 1 can (4-ounce) green chiles, chopped
  • 1 tablespoon cornstarch
  • 1/2 teaspoon white pepper, ground
  • 1/4 teaspoon salt
  • 8 ounces sour cream
  • 1 1/2 cup (6-ounce) Monterey Jack cheese, shredded
  • 1 1/2 cup (6-ounce) American cheese, shredded
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Rinse hominy and drain well. Combine hominy and white corn, green chilies, corn startch, white pepper, salt and sour cream.
     
  3. Spoon half of hominy mixture into a lightly greased 11 X 7" baking dish.
     
  4. Combine shredded cheeses; sprinkle half of cheese over casserole.
     
  5. Spoon remaining hominy mixture over cheese.
     
  6. Bake covered until bubbly, about 35 minutes.
     
  7. Sprinkle casserole with remaining cheeses and paprika and bake uncovered for 5 minutes.
