Tuna noodle Casserole

Ingredients
  • 3 cups medium noodles (or 1 cup elbow macaroni}
  • 1 cup chopped celery
  • 1/4 cup chopped onion
  • 2 tablespoons butter or margarine
  • 1 can condensed cheddar cheese soup or cream of mushroom soup
  • 3/4 cup milk
  • 9 1/4 ounces can tuna, drained and broken (or two 6 3/4 oz. cans salmon)
  • 1/4 cup chopped pimiento
  • 2 tablespoons grated Parmesan cheese
  • Parsley sprigs, optional
Instructions

Cook noodles or macaroni according to package directions. Drain and set aside. Meanwhile, in a saucepan, cook celery and onion in butter or margarine till tender. Stir in soup and milk. Gently stir in tuna or salmon, pimiento, and the cooked noodles or macaroni. Transfer to a 1 1/2-quart casserole. Sprinkle with Parmesan cheese. Bake in a 375 degree oven for 25 to 30 minutes or till heated through. Garnish with parsley sprigs, if desired.
