Sweet Potato Souffle

Ingredients
  • 1 pound bulk pork sausage
  • 3 cups cooked sweet potatoes
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter or margarine
  • 1 egg
  • 1 cup crushed pineapple
Instructions

Break sausage into pieces. Brown sausage over low heat in heavy skillet. Drain off fat. Combine remaining ingredients in large bowl. Beat with rotary beater until fluffy. Stir in crisp sausage. Drop in mounds on greased baking sheet. Bake in moderate oven (375 deg) 25 minutes. makes 6 servings.
