Sausage and Pumpkin Casserole

Ingredients
  • 500g pumpkin
  • 1 onion, finely chopped
  • 1/2 tsp salt
  • 1 cup grated cheese
  • 1/8 tsp pepper
  • 500g sausage meat
  • 1 cup tomato puree
Instructions

Peel the pumpkin and cut into chunks. Place in a casserole dish. Scatter onion and cheese over the pumpkin. Sprinkle with salt and pepper. Using wet hands form sausage meat into balls. Place in cold frying pan. Turn on heat and brown evenly. Drain on absorbent paper and place in casserole. Pour tomato puree over this and cover with lid. Bake at 190 C for 1 1/4 hours.
