Poor Man's Simple Supper

Some days you just don't have the time nor the money to make a meal for an entire family. Poor Man's Simple Supper is budget-friendly and appetite-friendly. Good for the kids and good for your wallet, you'll love this casserole recipe.

Ingredients

  • 1 box of noodles, what ever you have
  • 4 frozen breaded chicken fillets
  • 4 teaspoons onion, chopped
  • 2 tablespoons butter or margarine
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • dash white pepper, to taste
  • dash garlic powder, to taste
  • 2 cups light cream or milk
  • 4 tablespoons dry white wine
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare fillets according to package directions.
     
  2. Cook noodles according to package directions; drain.
     
  3. Meanwhile, in a 1-quart saucepan cook onion in hot butter until tender, but not brown.
     
  4. Whisk in flour, salt, pepper and garlic powder. Add light cream all at once. Simmer and cook, stirring, until thickened, about 2 minutes.
     
  5. Whisk in the wine and parsley; cook 2 minutes longer.
     
  6. To serve, arrange noodles on warm serving platter. Place hot fillets on top. Pour some of the sauce over fillets; pass remaining sauce.

what poor man keeps wine in the house on a regular basis? i love cooking with wine, but it's definitely a splurge item for us!

Precooked breaded chicken fillets??? That is not a poor man's meat.
