"My nine year old calls this Surprise Pizza! Because, well... surprise! It's not really pizza. Haha. And while it's not actually pizza, it is hugely popular in my house. If I want to be absolutely sure there will be no complaining about dinner, this is the recipe I pull from my back pocket. We usually do the pepperoni version, but sometimes I mix things up and add sausage, squash, olives, and even anchovies (shhhh, don't tell the children). Pepperoni Pizza Baked Ziti is super versatile and incredibly easy to make. I also love that you can freeze it! Yay! Make several trays at once and then pop them in the freezer for busy night."

Pasta casseroles are delicious, and can be made quickly on a busy weeknight when dinner needs to be on the table in no time. This recipe combines the flavors of Italian pasta and pepperoni pizza. For a healthier version, I would use part skim ricotta cheese and low fat mozzarella cheese. The ziti should be drained while it is still underdone since it will continue to cook in the oven. That way the pasta will have a good consistency after it is done baking.
