Old School Meat Puff

Ingredients

  • 1 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 egg yolks, beaten
  • 1 cup milk
  • 1 1/2 cup leftover meat, coarsely chopped
  • 2 teaspoons onion, minced
  • 1/4 cup carrot, grated
  • 2 tablespoons shortening, melted
  • 2 egg whites, stiffly beaten

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. Pour all of your dry ingredients into a sifter and sift together.
     
  3. Mix your egg yolks and milk together and then add them to the sifted ingredients. Stir well.
     
  4. Add the onion, meat, carrot, and shortening; mix well.
     
  5. Fold in the egg whites. Now pour the entire mixture into a well-greased 1-quart baking dish.
     
  6. Bake for 45 minutes. Serve with gravy.
