Hungry Boy's Casserole

Ground beef, celery, onions, garlic and chick peas are cooked together and topped with a homemade flaky biscuit, and then baked to perfection in this easy casserole recipe. Perfect for a family with a big appetite, Hungry Boy's Casserole will be a great success.

Ingredients
  • For the Filling:
  • 1 1/2 pounds ground beef
  • 1 cup celery, sliced
  • 1 cup carrots, diced
  • 1 cup onions, chopped
  • 1 clove of garlic, minced
  • 3/4 cup catsup
  • 3/4 cup water
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 pound pork and beans
  • 1 pound chick peas of lima beans
  • For the Biscuit Dough:
  • 2 cups sifted flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons cold shortening
  • 3/4 cup milk
Instructions

For the Filling:

  1. In a large skillet saute the ground beef, celery, carrots. onions and garlic. (Set aside).
     
  2. Mix in the catsup, water, salt, paprika, pork and beans, and chick peas. Let this simmer on low while preparing biscuit dough (see next step).
     

For the Biscuit Dough:

  1. Preheat oven to 425 degrees F.
     
  2. Sift dry ingredients together and cut in shortening. Add milk to make a soft dough.
     
  3. Place on a floured board and knead lightly for a few seconds, using as little flour as possible on the board. Roll out dough (not too thin).
     
  4. Spread 1 cup of vegetable/meat mixture, that were simmered together, on top of dough.
     
  5. Roll up like a jelly roll and cut into 1 inch thick sections. Put the remaining meat and vegetables mixture in baking dish, top with biscuits sections.
     
  6. Bake at 425 degrees F about 20 minutes.
