Golden Carrot Bake

Ingredients
  • 3 cups shredded carrots
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheese
  • 1 1/2 cups milk
  • 2 beaten eggs
  • 2 Tbs. minced onions
  • 1 teasp salt
  • 1/4 teasp pepper
  • 1/2 cup shredded processed cheese
Instructions

Combine carrots, rice, 1 1/2 cups cheese, milk, and eggs: Stir in onion, salt and pepper. Pour mixture into a greased 1 1/2 quart casserole dish. Sprinkle remaining 1/2 cup cheese on top. Bake at 350 degrees for 50-60 min. Yield 6 servings
