English Pea Casserole

Ingredients
  • 1 med. can English peas
  • 2 Tbsp margarine
  • 1 can cream of mushroom soup
  • 1 cup grated mild cheddar cheese
  • 1 jar (2 oz.) chopped pimento
  • 2 hard cooked eggs, chopped
  • Cracker or bread crumbs for topping
Instructions

Cook peas with margarine for about 10 minutes. Drain and mix with mushroom soup, cheese, pimento, and eggs. Pour into a 1 1/2 quart slightly greased casserole dish. Top with cracker or bread crumbs. Bake at 350 degrees for 30 minutes, or until crumbs are slightly browned, and cheese is bubbly.
