Easy Reuben Casserole

When casserole recipes take on the sandwiches that we love, you know it's going to be good. Just like the classic Reuben sandwich our, oh-so-good Easy Reuben Casserole is made with corned beef, Swiss cheese, and tangy Thousand Island dressing and then some. Baked so all of the ingredients blend together in a mouthwatering dish, it will become a family favorite just like the sandwich.

Ingredients
  • 1 can (29-ounces) sauerkraut, drained
  • 1/2 teaspoon caraway seeds
  • 1/2 cup Thousand Island salad dressing
  • 10 ounces fresh corned beef, sliced, or 12-oz can corned beef, chopped
  • 2 cups shredded Swiss cheese, packed lightly
  • 1 can (4.5-ounces) refrigerated buttermilk biscuits
  • 1/2 cup crushed rye crackers
  • 2 tablespoons margarine or butter, softened
Instructions
  1. Heat oven to 425 degrees F.
     
  2. Spread sauerkraut in 9-by-13-inch baking pan. Sprinkle with caraway seeds. Cover with dressing.
     
  3. Top with corned beef and cheese. Bake in preheated oven 15 minutes.
     
  4. Separate and place each biscuit on crushed crackers.
     
  5. Roll each into 4-inch circle, coating both sides with crackers. Arrange over casserole.
     
  6. Bake in preheated oven 15-20 minutes. Brush biscuit tops with butter or margarine before serving.
