Drumstick Skillet

When the kids bring their friends over for dinner unannounced, don't fret! This drumstick skillet is just the thing. This one pot dinner is great for feeding several hungry people, since your main dish and side dish cook together in one pot!

Ingredients
  • 1 tablespoon unsalted butter
  • 1 package chicken drumsticks
  • 1 2/3 cups water
  • 6 ounces rice
  • herbs and spices to taste
  • 2 cups mixed vegetables, unfrozen
Instructions
  1. Melt butter in a skillet over medium heat. Add chicken. Cover and cook 8 minutes, turning once.
     
  2. Remove chicken and set aside. Add water, rice, seasonings, and vegetables, stir well.
     
  3. Top with chicken. Bring to a boil. Reduce heat, cover and simmer 20 to 25 minutes or until liquid is absorbed and juices run clear when chicken is pierced.
     
  4. Remove from heat; let stand covered 5 minutes before serving.
