Crazy Easy Carrot Apple Casserole

This Crazy Easy Carrot Apple Casserole is one of the best comfort casserole recipes for the autumn months. Prepare everything the night before, so when the family is ready to eat, all you need to do is pop it in the oven for an hour. Yes, it's that easy! It's hearty enough for a main dish, but would work well as a great side dish, too.

Cooking Time: 1 hr

  • 3 carrots, pared and cut into about 1/2 inch rounds
  • 2-3 apples, peeled and sliced into fairly thick wedges
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/2 cup orange juice
  1. Cook carrots in boiling water until barely tender. Do not overcook them since they are going into the oven.
  2. Drain and mix the carrots and apples in a baking dish that has been lightly buttered.
  3. Combine sugar, cornstarch and cinnamon, sprinkle over the carrot and apple mixture.
  4. Dot with butter. Cover and refrigerate overnight.
  5. When ready to bake, preheat oven to 350 degrees F.
  6. Pour the orange juice over all and bake for about an hour.
