Ingredients

  • 12 ounces rotini
  • boiling salted water
  • 1 tablespoon butter or margarine
  • 4 medium-size chorizo sausages
  • 1 small onion, coarsely chopped
  • 1 can (about 4 ounces) green chilies, chopped
  • 1 cup milk
  • 1/2 teaspoon salt
  • pepper to taste
  • 2 cups shredded Jack cheese
  • 6 tomato slices

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Following package directions, cook rotini in a large kettle of boiling salted water until al dente. Drain, rinse with cold water, and drain again.
     
  3. Meanwhile, melt butter in a wide frying pan over medium-high heat. Remove sausage casings, crumble meat into the pan, and add onion.  Cook until sausage is browned and onion is limp (about 5 minutes). Pour off drippings and add cooked pasta, chilies, milk, salt, and pepper to taste.
     
  4. Pour half the mixture into a greased 2 1/2 quart casserole dish; sprinkle with half the cheese. Add remaining mixture, arrange tomato slices on top, and sprinkle with remaining cheese.
     
  5. Bake, uncovered, until top is slightly browned.

The casserole offers a change from the usual Italian style pasta bake, swapping out Italian sausage for chorizo sausage, and including green chilies and jack cheese for delicious Mexican flavors. For the milk in the recipe, I would use skim milk. The casserole could be topped with sliced olives, instead of tomato slices, if desired.
