Cheesy Melt Rice Casserole

This Cheesy Melt Rice Casserole is easily one of the best easy casserole recipes for dinner. Two different kinds of cheese, sour cream and a little bit of spice all blend to make a delicious combination. Also it pairs well with several different main dishes.

Ingredients

  • 2 cups water
  • 1 cup long grained rice
  • 1 tablespoon bouillon
  • 16 ounces sour cream
  • 1 1/2 cup Colby cheese, grated
  • 1 cup Monterey jack cheese, grated
  • 4 ounces green chiles, chopped
  • 1/2 cup red pepper, chopped
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a medium saucepan combine water, rice and bouillon, bring to a boil, reduce heat and simmer about 15 minutes until tender.
     
  3. In a small bowl combine all ingredients, reserving 1/2 cup of the Colby.
     
  4. Turn rice/cheese mixture into greased casserole dish and bake for 25 minutes, top with remaining cheese and bake another 5 minutes to melt.

This is a quick and easy rice casserole that I would probably enjoy. Anything that includes cheese is always pretty good. For this recipe, I would use lite sour cream, and reduced fat versions of the Colby and Monterey Jack cheeses, if available. Also, since I don't like my food really spicy, I would use mild green chiles.
