Bean and Pork Chop Casserole

This is a cowboy favorite that can't be beat. Delicious pork chops are baked with beans and a sweet sauce made partially from maple syrup.

Serves: 4

Cooking Time: 45 min

Ingredients
  • 2 15-oz cans Ranch-Style Baked Beans
  • 1 tablespoon vegetable oil
  • 4 center cut pork chops, thin cut
  • 1 small onion, chopped
  • 1 large apple, peeled and cut into chunks
  • 1/4 cup seedless raisins
  • 1/4 teaspoon ground cinnamon, divided
  • 1 tablespoon maple-flavor pancake syrup
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F. Grease 13x9" baking dish.
     
  2. In large skillet, over medium-high heat, in hot oil, brown chops on both sides, about 10 minutes; remove to plate. In drippings remaining in skillet, saute onion 5 minutes or until softened. Stir in beans, apple, raisins and 1/8 tsp cinnamon; spoon into prepared baking dish.
     
  3. Place chops on top of bean mixture; cover. Bake 30 minutes.
     
  4. Remove cover; brush chops with syrup then sprinkle with salt and remaining 1/8 tsp cinnamon. Bake 15 minutes longer or until chops are fork-tender.
