Alternative Broccoli Casserole

This Alternative Broccoli Casserole will get you your veggie fix, and then some! With loads of broccoli, mushrooms, peppers, and onions, plus hints of mozzarella, mayo, and almonds, this dish has an array of flavors to tantalize your taste buds. This easy broccoli casserole is a winner.

Cooking Time: 40 min

Ingredients
  • 2 cups broccoli, chopped
  • 2 cups mushrooms, chopped
  • 3/4 cup onion, chopped
  • 1 cup peppers, chopped
  • 1/4 cup chick peas
  • 1/2 cup egg substitute
  • 1 ounce lowfat mozzarella cheese
  • 1 teaspoon light mayonnaise
  • 2 teaspoons slivered almonds
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Put veggies in a large casserole pan.

  3. Mix egg substitute, cheese, and mayo. Pour over vegetables.
     
  4. Sprinkle almonds over the top. Bake for 35 to 40 minutes.
