Ingredients

  • 1/2 cup sugar
  • 3 tablespoons self-rising flour
  • 1 can pineapple tidbits, juice reserved
  • 3 tablespoons reserved pineapple juice
  • 1 cup sharp Cheddar, grated
  • 1/2 to 3/4 cups Ritz cracker crumbs
  • 1/4 stick butter, melted

Instructions

  1. Preheat oven to 300 degrees F.
     
  2. Mix together sugar, flour, pineapple, juice, and cheese.
     
  3. Pour into greased casserole dish and cover with cracker crumbs.
     
  4. Pour melted butter over crumbs.
     
  5. Bake 20 minutes.

I've made this casserole for years or one very close the proportion of the ingredients might be a bit different Would NEVER have tried it just from reading the recipe I got the recipe AFTER I had sampled the dish I take it to potlucks all the time and always take a few copies of the recipe because it never fails that several people ask for it We NEVER have ham at our house without Pineapple Casserole It's the perfect accompaniment Suggestions I'd make Use Crushed Pineapple instead of Tidbits use the gourmet or fine grate cheddar and not necessarily sharp and combine the melted butter with the cracker crumbs before topping the casserole I think I also use double the pineapple and double the cheese for that amount of sugar and flour and add c melted butter to the mixture and no juice Use one whole sleeve of Ritz crackersRead More Great recipe try it
