Pralines

Ingredients
  • 2 cups light brown sugar
  • 1/2 cup evaporated milk
  • 1/4 cup butter
  • 2 1/3 cups pecans (whole or chopped)
  • 1 teaspoon vanilla
Instructions

Combine sugar and milk in a saucepan, bring to a boil and continue to cook until a drop forms in a soft ball in cold water, stirring often. Add butter and pecans; bring back to soft-ball stage while stirring constantly. Remove from heat, add vanilla and beat until mixture begins to thicken. Drop by teaspoon on wax paper. Makes about 30 pralines
