Hawaiian Pineapple Candy

This one-pot candy recipe may make you abandon the store-bought kind altogether. Hawaiian Pineapple Candy is an easy candy recipe that's perfect for a summer treat. Crushed pineapple, vanilla, pecans and more give this candy its flavor and texture. And since pineapple recipes are always a hit during the sun shining months, this candy is sure to be a favorite treat. It's the perfect dessert to serve at your next party or give as a gift.

Ingredients
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup milk or cream
  • 1/2 cup crushed pineapple, undrained
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • 1/2 cup pecans
Instructions
  1. Cook sugars, milk and pineapple until mixture forms a soft ball when a little is dropped in cold water.
     
  2. Remove from fire; add butter, vanilla, nuts.
     
  3. Beat until creamy, drop by spoonfuls onto waxed paper.
     
Notes

Sometimes it helps to cook just a hair beyond the soft ball stage to get the candy to harden. The beating is the big secret. The color will change as the candy gets stiff. If it is too stiff to drop from the spoon, add a spoonful of hot water as needed, being sure to beat after every addition of water.
