Almond Bark

This cranberry white chocolate almond bark is a delicious treat for anyone who adores white chocolate. Break it into pieces and wrap with colored cellophane and tie with ribbon for a quick and easy holiday or birthday gift.

Ingredients
  • To make 1 lb, use 12 ounces white choc, 3 ounces unblanched salted
  • almonds almonds and 1 ounce dried cranberries. You can vary to use
  • more almonds. Personal taste. I use these proportions as I was also
  • selling the bark. Personal, I usually use more almonds and cranberries.
  • I usually pay $15 per lb for dried cranberries so I don't go
  • overboard.
Instructions
  1. Grease cooking sheet with butter. Roast almonds for about 10 minutes in a 350 degree F oven. Let almonds cool.
     
  2. Melt white chocolate. Add almonds to chocolate. Add dried cranberries if desired. Spread on a clean ungreased cookie sheet. Spread, moving almonds and cranberries around. Work fairly quickly.
     
  3. Put in fridge to cool. 
Notes

Alternate method: Put roasted almonds on clean cookie sheet. Pour melted chocolate on almonds and spread around. Distribute dried cranberries, if desired. Cool. To even out chocolate, tap bottom of cookie sheet
