This was my first encounter with cookie butter. We don't have a Trader Joe's in our area (closest is about 90 minutes away), and I haven't made a search for Biscoff Spread yet, but I should be able to find it around here. The homemade version that's linked to in the recipe looks interesting, though I'd use the Biscoff cookies instead of ginger snaps. I'd probably also use dark chocolate rather than milk chocolate, but that's just a personal preference.
