This Ugly Cake Mix Cake may not look especially pretty but it sure does taste good! If you're looking for yellow cake mix recipes that are irresistibly delicious, you have to try this dessert recipe. With coconut, pecans and cream cheese, it's hard to go wrong. If only all easy dessert recipes were this tasty!

Ingredients

  • 1/2 cup softened margarine
  • 3 eggs
  • 1 box yellow cake mix
  • 1 can coconut
  • chopped pecans
  • 6 Tbsp margarine
  • 8 ounces cream cheese
  • 1 box powdered sugar

Instructions

  1. Preheat oven to 300 degrees F.
     
  2. Mix the first three ingredients and spread in a 9 X 13 inch pan.
     
  3. Top with coconut and pecans.
     
  4. Mix remaining ingredients and spread on top of first layer.
     
  5. Bake for 1 hour.

This recipe looks really good and its great to have some recipes on hand to make a different and yummy dessert using a box of yellow cake mix as the base. Cream cheese frosting is always a hit and the coconut and pecans add a delicious flavour. This would be great to bring to a potluck or dinner party.

it sound like a delicious recipe but i'm confused about the powdered sugar.do i put all the ingredients and then bake for 1 hour??

I think the powdered sugar is meant to be mixed with the cream cheese for the frosting. An hour does seem long to bake though?

This cake recipe sounds like a very simple version of an italian cream cake, except an italian cream cake contains both coconut and pecans in the cake batter, also. Sounds good and will try this recipe soon.

If I remember correctly a can of coconut was 3 1/2 ozs I have not seen coconut in a can for many years , but it would be 1/2 of a 7 oz bag or 1/4 of a 14 oz bag. I hope this was helpful

Recipe sounds good, amounts are not very specific....coconut or nuts . It almost sounds like a gooey butter.

This sounds like a southern "dump cake" recipe that my mother use to make...instead, it uses cherry pie filling and the top is just dotted with butter.

I too am wondering what a can of coconut amounts to when you buy it by the bag???? I do not think it is a can of coconut frosting though...

A can of Baker's coconut is probably 1 1/2 to 2 cups.

Some areas have canned coconut available...when using the bags that most areas are able to buy, the conversion is about 1-1 1/2 cups or to your own taste.
