Pumpkin Roll

Ingredients
  • 3 eggs
  • 1 tsp lemon juice
  • 1 c white sugar
  • 2 c pumpkin
  • 3/4 c flour
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 2 tsps cinnamon
  • 1 c nuts
  • 3 ounces cream cheese
  • 1 c powdered sugar
  • 4 Tbsp butter
  • 1 tsp vanilla
Instructions

Beat 3 eggs frothy, then add your lemon juice, sugar, pumpkin and then add the flour, baking powder, nutmeg and cinnamon. Grease and flour cookie sheets, pour in cookie sheets, add chopped nuts. Bake at 350 degrees for 10 to 15 minutes. Take out oven, dump on powdered sugar cloth. Roll up and let cool. Then mix your cream cheese filling together. Unroll pumpkin roll and put filling in it. Then put in plastic wrap and refrigerate.
