Nana's Pecan Cake Roll

A classic treat that everyone in the family loves, Nana's Pecan Cake Roll is a dessert that's great for special occasions, or any day of the week! With a sweet chocolate and cream filling rolled up in a cake dough loaded with ground pecans, this traditional treat is unlike any other dessert you've tasted. Ingredients

  • 4 eggs, separated
  • 1 cup confectioners' sugar
  • 2 cups ground pecans
  • 1 cup whipping cream
  • 3 tablespoons sugar
  • 2 teaspoons baking cocoa
  • 1/2 teaspoon vanilla extract
  • chocolate shavings and additional confectioners' sugar, optional

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. In a mixing bowl, beat egg yolks and confectioners' sugar until thick, about 5 minutes.
     
  3. In another bowl, beat egg whites until soft peaks form; fold into yolk mixture.
     
  4. Fold in pecans until well blended (batter will be thin).
     
  5. Grease a 15x10x1-inch baking pan; line with waxed paper, grease and flour paper. Spread batter into pan.
     
  6. Bake for 10-15 minutes or until cake springs back when lightly touched. Turn onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in towel, starting with short end. Cool on wire rack 1 hour.
     
  7. Meanwhile, beat the cream, sugar, cocoa and vanilla in a mixing bowl until soft peaks form.
     
  8. Carefully unroll cake. Spread filling over cake; roll up again. Refrigerate.
     
  9. If desired, garnish with chocolate shavings and confectioners' sugar.

 

Note: This cake does not contain flour.
