Mom's Triple Layer Carrot Cake

Moist carrot cake is always a winning dessert when served at family gatherings. With this easy recipe for Mom's Triple Layer Carrot Cake, you can make a delicious version of this classic cake and it will be gobbled up in minutes... it's that good. Ingredients
  • 3 large eggs, beaten
  • 2 cups sugar
  • 1 cup plus 2 tablespoons salad oil
  • 2 cups plus 1 tablespoon cake flour, sifted
  • 1 1/8 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking soda
  • 1 1/2 cups coconut
  • 2 cups carrots, grated
  • 1 cup plus 2 tablespoons crushed, drained pineapple
  • 1 cup walnuts, chopped
  • 1 cup raisins
  • FOR THE FROSTING
  • 3/4 cup soft butter (1 1/2 sticks)
  • 12 ounces cream cheese
  • 3 cups confectioners sugar
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon cinnamon
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Grease and flour three 8" layer cake pans.
     
  3. With mixer on high speed, cream eggs, sugar and oil until creamy and thick, about 3-5 minutes.
     
  4. Sift together flour, cinnamon, nutmeg, salt and baking soda.
     
  5. Slowly add 1/3 of the dry mixture to the egg mixture; beat well.
     
  6. Repeat with remaining dry ingredients, beating well after each addition. Batter will be stiff.
     
  7. One at a time, fold in coconut, carrots, pineapple, walnuts and raisins.
     
  8. Divide batter among prepared pans.
     
  9. Bake for 40-45 minutes or until tester inserted in middle comes out clean.
     
  10. Let cakes cool in pans 5 minutes before turning out onto racks to cool completely.

 

To make the frosting:

  1. Cream butter and cream cheese.
     
  2. Add vanilla and cinnamon.
     
  3. Slowly add confectioners sugar and beat until smooth and spreadable.
     
  4. Frost cooled cake.
