Millionaires Cake

This Millionaire's Cake is one of those yellow cake mix recipes that will "wow" party guests with its great flavor. With layers of pudding, cream cheese, pineapple and Cool Whip, this refreshing icebox cake is perfect to serve on a hot summer day. It's hard to find easy cake recipes like this one that are light and airy enough for the warm weather months, so hold onto this one. It's a keeper!

I topped the cake with shredded coconut and cherries. You could add walnuts or pecans if you like. Whatever you use for the toppings, just have fun with it and make it pretty. Impress your guests when you bring it out of the kitchen.

This cake definitely has a tropical feel, but it's refreshing to eat in the winter as well as in the summer. It might take your mind off of the snow.

Ingredients
  • 1 box yellow cake mix, plus ingredients listed on the box
  • 1 small package of instant pudding (pineapple or vanilla), plus ingredients listed on the box
  • 1 (8-ounce) package of cream cheese, softened
  • 1 (22-ounce) can crushed pineapple
  • 1 (16-ounce) container Cool Whip
  • nuts, cherries or coconut, for topping
Instructions
  1. Bake 1/2 of the cake (according to cake mix box instructions) in a 9 x 13-inch pan. You can either make the whole cake and use the other half for cupcakes, or you can make the whole cake mix recipe and then double the other ingredients in this recipe.
     
  2. Prepare pudding as directed on package, beating in the softened cream cheese until well blended. Spread over cake.
     
  3. Drain pineapple and squeeze out excess juice. Distribute over pudding mixture.
     
  4. Spread Cool Whip over cake.
     
  5. Cover and refrigerate overnight.
     
  6. Decorate with nuts, cherries, or toasted coconut.

This cake was unbelievably moist. Definitely worth making again, for any occasion!

The pudding really sealed the deal for me here. Well, pudding and cool whip. YUM.

My only qualm concerning this cake is that it isn't seven times bigger... though I suppose I could convert the amount of ingredients to make this possible. Absolutely delicious. The pineapple, for me, offer the perfect compliment to the texture. Great idea for a summer cake, though I might serve this in January when everyone needs a tropical pick-me-up.

Who needs a summer day for this cake? I would make and eat it any time of year!

This was a really interesting cake. I don't know if I would include the pineapple in the future, but I would definitely use Cool Whip and pudding. I topped mine with coconut, which was a nice addition.

This cake is HEAVENLY. I feel like a queen eating it. It's also so delicious, I might eat it all.

This cake certainly was rich! It only took a small piece to satisfy me. I definitely recommend topping the cake with cherries, and I think chopped walnuts would make a great addition.

You are right cake mixes have gone down in size. Here is an easy fix: 1 1/2 cups all purpose flour 1 cup sugar 2 tsp. baking powder 1/4 tsp baking soda Whisk all ingredients together and store in a clean mason jar. When you wish to increase a 15.25 oz cake mix to 18.25 (the old size) add three ounces (about 6 tablespoons) to your cake mix and bake according to the directions. Hope this helps.

Oh yes, this sounds like my kind of cake. Wish I had some right now. However, the cake mix manufacturers have cut way back on the amount of product in a box. Maybe it would take more like 3/4 of it to cover a 9 x 13 pan. Does anyone know? I do not see anything wrong with using nuts, cherries AND coconut on top of the whipped cream.

My mom made this when I was a kid and I wanted to eat the whole cake! She made hers from sratch and I'm sure IT was better. At least use real whipping cream. Cool Whip is nothing but a lot of carcinogens!

This sounds like a recipe I used to make years ago. Is Jello making the pineapple pudding again? Would love to find it.
