Ma's Cake Mix Coffee Cake

There's nothing like homemade coffee cake recipes, and this one surely takes the cake. Ma's Cake Mix Coffee Cake might be the easiest coffee cake recipe in our collection. Made with cake mix for ease, it is then mixed with sour cream to make it extra moist, a touch of vanilla, and cinnamon and sugar to bring it all together. A wonderful way to start the morning, you don't want to pass up on one of our favorite cake mix recipes. Enjoy!

Ingredients

  • 1 box yellow cake mix
  • 1 package instant vanilla pudding mix
  • 1/2 cup vegetable oil
  • 1 cup sour cream
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/3 cup sugar

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Combine dry mixes (cake mix and vanilla pudding) in mixing bowl.
     
  3. Slowly add oil and cream and while mixing together.
     
  4. Add eggs one at a time and then vanilla extract.
     
  5. Coat Bundt pan bottom with cinnamon sugar mixture. Then add the batter, making sure to spread evenly with spatula around pan.
     
  6. Sprinkle top of cake with cinnamon sugar.
     
  7. Bake for 50 minutes.
     
  8. Let cool in pan 10 minutes.Turn the pan upside down and carefully remove cake.
     
  9. Sprinkle more cinnamon/sugar mixture over top.

This recipe has been around for decades and it is wonderful and easy to make. However, we made a mix of the cinnamon, sugar, about 2T cocoa, and chopped walnuts (1/2 C or more). You put some of the cake batter in the pan and add some of the mix. Repeat one or two times.

Is the cinnamon amount correct? 1/3 cup of cinnamon is 5 Tablespoons plus a teaspoon. That's one heck of a lot of cinnamon.

I know you added cinnamon and sugar and some extra moisture, but this is still just a cake. I would suggest layering in a combination of chopped pecans, butter and the cinnamon sugar between two layers of batter. Then it is more like coffee cake.
