Mango Upside Down Cake

Turn that frown upside down and make a great upside down cake recipe! Freshly squeezed lemon juice and sweet mangoes go into this wonderful fruity cake. Caramelized sugar and a moist cake make this citrus treat a must.

Ingredients

  • 2 cups sliced ripe mangos
  • 2 tablespoons lemon juice
  • 1 tablespoon margarine
  • 1/3 cup brown sugar
  • 1/4 cup margarine
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 1/4 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Pour lemon juice over mangos and let stand 15 minutes.
     
  3. Melt 1 tablespoon of margarine in 8-inch cake pan or casserole. (Do not use iron skillet as mangos will darken.)
     
  4. Add brown sugar and cover with mango slices.
     
  5. To prepare cake batter, cream margarine; add sugar and cream; add beaten egg.
     
  6. Sift dry ingredients and add alternately with milk. Pour over mangos and bake 50 to 60 minutes. When cake is done, turn upside down and serve while warm.

What cream?

I believe the word means the procedure, not an ingredient. In step #5, you "cream" (or beat) the margarine; then you add the sugar and "cream" (beat) again.
