Lazy Jane Cake

Where does this Lazy Jane Cake get its name? Most likely because any lazy Jane can make it! This is one of those easy cake recipes you can make almost with your eyes closed! So if you're in the market for a no-stress dessert recipe, try this one! It's a great crowd-pleaser for kids and adults alike.

Ingredients
  • 2 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • 5 tablespoons brown sugar
  • 3 tablespoons light cream
  • 1/2 cup coconut
  • 1/4 cup walnuts, chopped
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Beat eggs. Add sugar gradually and beat until fluffy.
     
  3. Sift flour, baking powder and salt together and add to egg mixture. Beat thoroughly.
     
  4. Heat milk and butter to boiling point, add to batter. Beat lightly and add vanilla.
     
  5. Bake in a 7x7 inch pan for 30 minutes.
     
  6. Mix together brown sugar, cream, coconut and walnuts until smooth.
     
  7. Spread topping mixture over cake. Place cake under broiler until light brown.
