Easy Pumpkin Fruitcake

Ingredients
  • 1 cup cooked mashed pumpkin (warm)
  • 4 ounces butter
  • 2 eggs
  • 1 cup white sugar
  • 2 tsps mixed spice
  • 2 cups self raising flour
  • 375 gm mixed fruit
Instructions

Cream butter and sugar togrther, add eggs and beat well. Beat in flour and spices. Stir in mixed fruit then fold in pumpkin. Pour into a greased loaf tin and bake for 40-50 mins at 180-200 C. Serve warm with butter.
