Blueberry Coffee Cake

This delectable blueberry coffee cake with streusel crumb topping is so easy to make, even a first-time baker can do it. The outcome is moist, delicious cake, and it's perfect for breakfast, dessert, or to bring to a picnic.

Serves: 12

Cooking Time: 50 min

Ingredients
  • 2 cups flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup milk
  • 1 egg
  • 2 cups blueberries
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup soft butter
Instructions
  1. Preheat oven to 375F degrees.
     
  2. Grease round 8 or 9 inch pan, or square pan.
     
  3. Blend the 2 cups of flour, the 3/4 cup of sugar, baking powder, salt, shortening, milk, eggs and blueberries, beating vigorously for half a minute.
     
  4. Spread in the pan.
     
  5. In another bowl, combine the 1/2 cup of sugar, 1/3 cup of flour, cinnamon, and butter.  Blend until crumbly.
     
  6. Sprinkle topping over the batter.
     
  7. Bake at 375F degrees for 45 to 50 minutes, or until a wooden pick inserted comes out clean.
