Apple Cake with Walnuts

This is one of many delicious apple cake recipes but it comes with a crunch. A cup of walnuts adds a mellow flavor and texture. When the cake is baked cream cheese frosting is spread on top. Make this cake for the walnut lover you know!

Ingredients

  • 2 eggs
  • 2 cups sugar
  • 1/2 cup canola oil
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 5 Granny Smith apples, diced
  • 1 cup walnuts, chopped
  • Cream Cheese Frosting:
  • 1 (3-ounce) package of cream cheese
  • 3 tablespoons butter, softened
  • 1/2 teaspoon vanilla
  • 1 1/2 cup powdered sugar

Instructions

Apple Cake:

  1. Preheat oven to 350 degrees F.
     
  2. Beat eggs until light and fluffy.
     
  3. Gradually add in sugar, oil, and vanilla.
     
  4. Sift together flour, salt, soda, cinnamon, and nutmeg. Add to first mixture.
     
  5. Stir in apples and walnuts. Place in greased 9x13" pan and bake for 45 min or until center springs back when touched.
     
  6. Allow to cool in pan on a rack for 15 min, spread with Cream Cheese Frosting.

Cream Cheese Frosting:

  1.  Beat cream cheese and butter together.

  2. Add vanilla and beat.
     
  3. Gradually beat in powdered sugar until smooth.
