Shrimp Gumbo

Ingredients
  • 3 to 4 lbs peeled raw shrimp
  • 1 (28 oz) can tomatoes, chopped
  • 1/2 (10 oz) bag frozen green pepper,chopped
  • 1 (12 oz) bag frozen chopped onion
  • 1 pound frozen cut okra
  • 2/3 cup vegetable oil
  • 3 quarts water
  • 1 stick butter or margarine
  • 1/4 tsp crushed red pepper
  • 1 tsp Tabasco hot sauce
  • 1/2 tsp black pepper
  • 1/2 tsp ground bay leaves
  • 1 tsp chopped garlic
  • 2 tsps salt
  • 3/4 cup flour
Instructions

In big, heavy pot, melt butter; add okra and cook on medium heat for 15 or 20 minutes---stirring often. In another big iron pot or skillet, heat and stir oil and flour to make a dark brown roux. Add slightly thawed vegetables. Add a cup of hot water slowly to the roux, stirring until smooth. Now combine the two mixtures into the larger pot. Add shrimp, tomatoes, water, garlic and seasonings and bring to a boil, then lower heat and simmer about 30 minutes. Serve in bowls over fluffy rice. Try a side dish of potato salad and serve iced tea. Makes 12 to 15 bowls. Although we normally use fresh vegetables, using frozen chopped vegetables in this GUMBO will not sacrifice it's family-favorite flavor.
